The weekend is just around the corner! Hooray! It’s been a long time since I had a full 5-day week at work. Between the bank holiday weekends and some long weekends I took, I have been spoiled and I  will miss my half weeks… But for now I want to share a recipe for my favourite meal of the day, breakfast (unless you are a breakfast for dinner kind of people which I applaud).<br /><br />Pancakes are a dear choice for breakfast, but the mess they create in the kitchen is an absolute put off. I am avoiding but they keep popping up in our dinning table quite often in many variations. I made these blueberry pancakes a couple of weeks ago and they were an absolute hit. Imagine a fluffy, airy pancake, juicy blueberries popping in your mouth and a refreshing raw blueberry jam to finish! Now tell me this is not heaven…<br /><br />Your Shopping List<br /><br />For the pancakes<br /><br />3 eggs<br /><br />125 gr plain flour<br /><br />60 ml full fat milk<br /><br />50 gr melted butter<br /><br />2 tsp baking powder<br /><br />1 tbsp powdered sugar<br /><br />a handful of blueberries lightly crushed with a fork<br /><br />grounded hazelnuts (optional/ to taste)<br /><br />For the raw blueberry jam<br /><br />150 gr blueberries<br /><br />1 heaped tbsp tightly packed brown sugar<br /><br />zest of a lime<br /><br />Mix eggs, milk, butter and flour to a creamy dough. Add the sugar and baking powder and keep mixing for another 30 sec. Finally add the blueberries and ground hazelnuts.<br /><br />Add all the ingredients for the jam in a blender and mix for about 2-3 minutes.<br /><br />Heat a pan and melt a small portion of butter to cover the bottom. Now I like my pancakes chunky so I use a big ladle, but you can use a smaller one if you fancy. Once the butter is melted and the pan really hot pour a portion of the batter. You will see the batter rising slightly, leave for a 3 minutes and flip carefully.<br /><br />Serve while they are still warm, with a dollop of yogurt, the jam and some fresh blueberries!<br /><br />Enjoy!<br /><br /> <br /><br />If The Choux Fits - Food meets fashion
