Rice Pilaf with Sausage and Peanuts

Rice Pilaf is a great staple and mothers recipe but I have added meatless sausage and peanuts – fantastic!<br /><br />Rice Pilaf is a great staple because of the simple fact that everyone loves it. This is basically mother’s recipe but I have added meatless sausage and peanuts to this rendition so it has also become a main dish. Everything is put into a casserole so the service is simple too. Brown rice is the carb but you can use white rice if you (or the children) aren’t a fan. You might want to try it though because this could be the way you find that you like brown rice. It really is good.<br /><br />Ingredients<br /><br />1 package 8 oz. to 10 oz. meatless sausage patties<br /><br />1 Tablespoon canola oil<br /><br />1 onion, finely diced (about 10 oz.)<br /><br />1 small green bell pepper, finely chopped (about 8 oz.)<br /><br />1 cup cooked rice<br /><br />10 ounce portabella mushroom soup (comes in a box)<br /><br />1/2 teaspoon salt (or to taste)<br /><br />1/4 teaspoon pepper (or to taste)<br /><br />1/3 cup salted peanuts<br /><br />Directions<br /><br />Lightly oil a 9" x 9" casserole dish.<br /><br />Cook the rice and set aside.<br /><br />Heat oil in a large skillet.<br /><br />Add the onion and bell pepper and saute about 10 minutes.<br /><br />While this is cooking unwrap the frozen sausages and put in the microwave to partially defrost so that it can be chopped up in a food processor. The variety I use needs to be kept frozen until used so read your directions.<br /><br />Put the sausage in a food processor and pulse a few times to grind up the patties.<br /><br />Add the sausage to the skillet along with the onion mixture.<br /><br />Cook for about 10 minutes at a medium heat.<br /><br />Add the rice and mushroom soup to the skillet and cook another 5 minutes.<br /><br />Add salt and pepper to taste.<br /><br />http://veganinthefreezer.com/wp-content/uploads/2013/01/Sausage-Eice-Pilaf-mushroom-soup.jpg<br /><br />At this point you can freeze the mixture for future baking.<br /><br />Please follow any of the directions defined in my article http://veganinthefreezer.com/preparing-food-for-the-freezer<br /><br />IF BAKING NOW:<br /><br />Pour into the prepared casserole dish.<br /><br />Sprinkle the top with peanuts and bake at 350 for 30 minutes.<br /><br />The post Rice Pilaf with Sausage and Peanuts appeared first on Vegan in the Freezer.
