Carnitas son la versión mexicana de carne de cerdo tirado. Estofado primero en una salsa picante, lomo de cerdo se cocina lentamente hasta tan tierna la carne sólo fragmentos fácilmente con un tenedor, entonces se tuesta a fuego alto para hacer pedacitos crujientes doradas llenas de sabor.
