  • 1/2 cup ditalini or small elbow macaroni
  • 6 cups basic chicken stock or canned
  • 2 each fresh tomatoes, deeply cored and cut in chunks
  • 4 each carrots, trimmed, peeled, halved lengthwise and cut into roughly 1-inch long by 1/2-inch wide; pieces
  • 8 oz small onions (average diameter 1/2 inch), peeled and trimmed (1 cup)
  • 4 oz fresh green beans, trimmed
  • 2 each zucchinis, halved lengthwise and cut across into 1/2-inch pieces
  • 3 whole garlic cloves, smashed, peeled, and chopped
  • 1 cup shredded leftover roast chicken meat, optional
  • 1/4 cup packed fresh basil leaves, cut across into thin strips
  • 1-1/2 tsp kosher salt
  • 1 dash black pepper, freshly ground, to taste
  • 1 dash olive oil, to taste
