  • 2 cans (14.5 oz each) rotel diced tomatoes & green chilies
  • 2 cans (14.5 oz each) fat free chicken broth (i prefer imagine organic products - but use what you like)
  • 1 can (16 oz ) rosarita no-fat traditional refried beans
  • 1/2 cup whole kernel corn (i prefer frozen - if fresh corn is not available, once again use what you like)
  • 2 cups shredded cooked chicken (i cheat and buy a rotisserie chicken and shred it - using the rest to make soup for another meal)
  • fried corns tortilla strips or chips
  • shredded monterey jack cheese on top to garnish - say 1 or 2 tablespoons - don't go crazy w the cheese
