I love making crêpes because they are great for filling with savory ingredients for a meal or sweet ingredients for a dessert. Plus you can make the batter ahead of time or the crêpes. The filling being used is a savory combination of sage sausage and buttercup squash. Serves 8 – 10 depending on how much filling you put in the crêpes.

Ingredients

  • crãªpe batter:
  • 1 1/2 cups of 2% milk
  • 1/4 cup of melted butter (i used salted but if you use unsalted add a pinch of salt.)
  • 1 1/2 cups of flour
  • filling:
  • 1 – 2 1/2 lb. buttercup squash cooked and flesh removed
  • 1 – 16 oz. package of owens brand or jimmy deans brand of sage sausage
  • half of a yellow onion diced about 1/2 cup
  • 1 tablespoon of olive oil
  • dash of kosher salt and fresh ground pepper
