Not having gone to the grocery store yet, I had pumpkin that I wanted to use, but with limited groceries in the frig, I put on my thinking cap and became creative. To my surprise, this 'Eggless Pumpkin Cookie" is a little crunchy on the outside and soft on the inside; perfectly sweet (for my taste) and will delight any child. With pumpkin, nuts, dried cranberries, and organic oats, it is much healthier than the other two recipes I have for traditional pumpkin cookies. These are worth a try and very simple to make. All it takes is a bowl, ingredients, a hand-mixer, large spoon and a cookie sheet for a delectable filling treat.
