This is one of my favorite dishes to prepare. Crispy on the outside and soft on the inside eggplant baked with homemade marinara sauce and mozzarella cheese. If you love eggplant, make this dish, you won't be sorry! There may be a better one out there but I haven't had it, so as far as i'm concerned this is it!
