I've come across many recipes for "fruit pizza" but none are as good as this one I got from Judy Ramsey (my childhood best friend's mom). I think what sets it apart is the homemade crust- simple and very tasty. I guarantee that once people try it, they won't be able to have just one slice. Top it with any fruits you like. I'd stay away from bananas and apples though because (even when tossed in lemon juice) they will brown. My favorites are kiwi and strawberries. I use Cool Whip Lite and low-fat cream cheese (neufchatel cheese) to lighten it up a little. Use the real thing if you like though.
