I've had this enchilada recipe for ages, and make it often. It is my husband's favorite casserole.:-) Wonderful! I usually double the mild green chiles, and use light sour cream and "healthy request" soup. Note: My family prefers these enchiladas made with corn tortillas, but feel free to use flour tortillas. ENJOY!!
