  • 4 med/lg potatoes cut into chunks (red, yellow, baking - your choice )
  • 1 cup low fat mayo
  • celery seed (1 tbs plus sprinkle a little on top for presentation)
  • salt/pepper to taste
  • 4 celery ribs (plus a few celery leaves) chopped
  • 1 small onion
  • 2 hb eggs chopped
