  • breakfast waffle
  • 2 eggs well beaten in a large bowl
  • 1/3 cup of non fat powdered milk
  • 6 oz. of fresh blueberries (or any berry)
  • 1/2 cup oat bran
  • 1 tsp. canola oil
  • sweetener (only sacchrin drops - optional)
  • 1/2 tsp. cinnamon
  • use a large waffle maker and start heating it up.
  • add oat bran, oil and dry milk to the beaten eggs in the bowl and mix well.
  • heat a small non stick skillet on medium high and place blueberries in it (or you can microwave them) add a little water and cook until the juices start to release. place aside in the pan. (or keep in microwave bowl)
  • spray waffel maker with non stick spray.
  • pour mixture into the waffle maker. spread out evenly and cook 2-3 minutes.
  • serve with fruit on top of the waffle for a complete breakfast.
  • serves: 1
  • note: waffles can be made to then freeze. reheat them in a toaster oven or microwave when ready to use.
