My dear friend Josy made this soup for us and it was love at first bite! She calls it her "skinny soup" because she ate lots of it when she was losing weight last year. She says it's "legal". With the full-flavored and very tasty tomato base you can create your very own favorite soup depending on what meats and/or vegetables YOU like! There is a long list here but you don't have to add so many things if you just want a basic soup with only a few nibbles in it. This soup is a bit of work but it's what I consider a gourmet soup, so please invest the time to create your own masterpiece. I love the spicy bite to this but you can make yours milder by leaving out the chipotle and cayenne if you like. Don't leave the curry powder out, though - it's a key ingredient. But do the leave the meat out and you'll have a fabulous vegetarian dinner.
