It's a light and refreshing dessert, reminiscent of key lime pie but much healthier. I'm not sure who to credit: I've had it for years and it could have come from a nutrition class or from Weight Watchers, but I know I've made it several times with good results and compliments.You can adda a can of crushed pineapple and/or coconut to make it more "tropical," but I actually prefer it as a light Summer dessert or a foil to a heavier meal.Cooking time is the chill time here, preparation time includes all "stove time."
