  • 3 stalks celery (medium sized stalks), thinly sliced
  • 3 each gala apples, unpeeled, quartered, cored, and cut into 1/4-inch dice
  • 1/2 cup raisins, preferably muscat, plumped 10 minutes in boiling water to cover and drained
  • ½ cup chopped walnut
  • ¾ cup mayonnaise
  • 1/2 tsp celery seed
  • 1 dash salt, to taste
  • 1 dash black pepper, freshly ground, to taste
  • 1 whole lettuce, (1 crisp head of lettuce)
  • 1 tbsp chopped toasted walnuts or pecans for garnish
