With about 80 Coq au Vin recipes, doesn't need another. But, I screwed up alton brown's recipe and we all loved it. I make this public mostly for my use, but perhaps someone likes a version with more dark roux than usually used. You can skip the refrigeration step. Feel free to use bouillon cubes but reduce the salt if you do. A dark roux is essential for making a rich brown sauce. Frozen pearl onions work well too, or just substitue more quartered onions.
