Ingredients

  • very easy skillet pasta sauce that cooks while pasta is cooking andhighlights both tomatoes and cheese. start with the wong wingappetizers for an exciting meal.
  • 2 ½ cups (625 ml) scoobi doo pasta (or other bite-size shapes)
  • 1 tbsp (15 ml) olive oil
  • 2 gloves garlic, minced
  • ½ tsp (2 ml) red pepper flakes
  • 1 medium zucchini, coarsely chopped
  • 1 – 1 ½ tsp (5 –7 ml) dried basil
  • 1 – 1 ½ tsp (5 –7 ml) dried oregano leaves
  • 5 medium florida sunfresh tomatoes, chopped
  • 1 pkg (225 g) black diamond™ medium or old cheddar cheese, cut into cubes
  • 2 green onions, sliced
  • cook pasta according to package directions. drain.
  • meanwhile, in large shallow skillet over medium-high heat, heat oil, garlic and red pepper flakes for 30 seconds. add zucchini and herbs, sauce 2 minutes. stir in tomatoes and heat through about 1 minute.
  • add drained pasta, cheese and green onions to skillet and toss to coat. serve immediately.
  • serves 4.
