River Run Chili

This is my favorite chili, adapted from the River Run Cookbook. River Run is a wonderfully quirky restaurant in Vermont that I had the good fortune to visit many years ago. I didn't make many changes, but did reduce the recipe so that it would fit in my 6 quart dutch oven. You can serve this the day you make it, but it is better if you let it sit overnight.

  • 1 lb 90% lean ground beef (chili grind if possible)
  • 1 1/2 lbs country-style boneless pork ribs, cubed
  • 1 large onion, peeled and chopped
  • 1 large green pepper, peeled and chopped
  • 3 garlic cloves, finely chopped
  • 2 tablespoons chili powder (i use penzey's medium)
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon oregano (i use penzey's mexican)
  • salt and pepper (to taste)
  • 1 (12 ounce) beer (i use red or amber)
  • 4 cups beef stock
  • 1 (28 ounce) whole canned tomatoes, drained and chopped
  • 1 (6 ounce) tomato paste
  • 2 (15 ounce) beans (small red, black or great northern, or a combination)
  • 1/4 cup masa harina (optional)
