Ingredients

  • 4 ounces cheddar cheese grated
  • 1 tablespoon butter unsalted, or olive oil
  • 1 small yellow onion chopped
  • 6 ounces mushrooms cremini or white button, sliced
  • 3 tablespoons flour, all-purpose
  • 3 cups milk, low-fat skim
  • 1 tablespoon dijon mustard
  • 2 teaspoons thyme leaves or tarragon, freshly minced, or 1/2 teaspoon dried*
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 8 ounces pasta shells small, dried whole-wheat, or whole wheat elbows, cooked and drained according to the package instructions
  • 4 cups broccoli florets small, cooked in boiling water for 1 minute (broccoli can be added to the pasta during the last minute of cooking, then drained
