I have had this recipe for a many years and am now just getting the opportunity to post. Easy and delicious -- just what we like:)

Ingredients

  • 6 cups cubed potatoes (we leave peelings on but feel free to peel)
  • 5 cups water
  • 2 cups chopped onions
  • 1 stalk celery, chopped (about 1/2 cup)
  • 1 carrot, thinly sliced
  • 1/4 cup butter
  • 1 teaspoon fresh ground pepper
  • 1/4 teaspoon ground cumin (feel free to use more or less)
  • 1/4 teaspoon cayenne pepper (feel free to use more or less)
  • 1 teaspoon minced bottled garlic
  • 1 (12 ounce) evaporated milk
  • 3 tablespoons fresh parsley, chopped
