In the summertime in the South, gardners plant squash in the Spring and it's easy to buy a six-pack of plants not remembering that squash is prolific and a plant or two will feed a lot of people. And it produces all summer. . You have to get creative to use it or find an apartment dweller who will take the stuff.

  • 1/4 cup butter + extra for topping shopping list
  • 1 large onion, chopped shopping list
  • 1 egg, beaten shopping list
