Spicy Lemon-Lime Chicken Fajita Filling

Really good chicken fajita filling. Adapted from a fajita recipe that used tequila where I use teriyaki. I feel better using this 'cause I know what spices go into it, therefore no MSG like some of the packaged fajita spice mixes. (For the record, since a lot of the liquid is drained from the chicken after it marinates, I've used only half portions of the marinade juices to calculate calories. Basically, you're covered.) :) Original recipe used generic measurements, but I weighed my ingredients this time, and used those to calculate calories. I've included my gram weights below if you find them of use! :) [Created 2007-12-19.]

Ingredients

  • * 4 large or 5 small boneless, skinless chicken breast halves, cut into chunks [mine weighed: 625g.]
  • * 1/2 cup lemon or lime juice [i usually squeeze a bit of each, 1/4 cup lemon and 1/4 cup lime - hence the recipe name!]
  • * 2 tbsp. kikkoman soy sauce
  • * 2 tbsp. kikkoman teriyaki sauce
  • * 2 tbsp. water
  • * 1/2 tsp. oregano
  • * 1 - 4 cloves garlic, crushed [adjust to personal taste. i used 4.]
  • * 1 small red onion, chopped [mine weighed: 105g.]
  • * 1 green pepper, sliced thinly into strips [mine weighed: 240g.]
  • * 1 red pepper, sliced into thin strips [mine weighed: 180g.]
  • * 1/4 to 1 tsp. red pepper flakes">red pepper flakes, optional [adjust to personal taste. i use 1/4 for mild, and 1/2 to 3/4 for medium heat.]
  • * 1 tsp. olive oil, reserved
