I worked many years (in my prime!) at a mountain lodge that served a popular Sunday brunch, and the main attraction was a cooked-to-order omelette. It was a treat to watch the chef/owner’s friendly banter with restaurant patrons as he prepared individual omelettes, working down a line of several skillets in perfect sync, so that when he returned to the first, it was ready to fold and serve to the eager guest. This recipe comes from my memories of watching him in action for so many Sundays of my life back then. This is certainly not the classic or French-sanctioned way of preparing an omelette, but it was HIS way, and it worked well and got customers coming back week after week. There’s no particular measurements because remember, this is prepared to order. Do you want one egg, two or three? Do you want a sprinkle of cheese or a healthy hand of it? No onions - no problem! Of course filling ideas today are endless - jalapeno, avocado cilantro and a variation of cheeses. This is really not a recipe, but a method - see the photo tutorial.
