Super Simple Southwestern Rice & Black Bean Chili

Black beans & rice sounded good, so I created this soup recipe to include both, stick to my skinny butt soup plan and make some lunches for the upcomig work week. Some may like it spicier than I and add spices. I like to add a dollop of fat free sour cream & 5 soda crackers.

  • 1 - package knorr sides plus southwestern western style rice
  • 1 - 15 ounce can kuner's southwestern black beans (drained)
  • 2 - 14 ounce cans swanson’s chicken broth (33% less sodium)
  • 3 - 5.5 ounce cans v8 vegetable juice, spicy hot
  • 2/3 cup hungry jack mashed potato flakes
