  • 4 cups onion, coursely chopped
  • 2 lbs prime rib of beef, roasted to medium rare, trimmed of fat and gristle and cut in 3/4-inch cubes (or roast pork or lamb)
  • 1 whole green bell pepper, seeded and cut in 1/4-inch julienne
  • 1 whole red bell pepper, seeded and cut in 1/4-inch julienne
  • 1 whole yellow bell pepper, seeded and cut in 1/4-inch julienne
  • 2 med fresh red tomatoes, coarsely chopped
  • 2 teaspoons garlic, pressed
  • 1 tbsp sugar
  • 1 tsp freshly ground pepper
  • 1 bay leaf, crumbled
  • 1 cup water
