When entertaining house guests with early morning flight departures, I use this recipe. I defrost the tator tots in fridge the day before.I suppose you could assemble the layers ahead and refrigerate and put Egg Beaters layer on later, but my refrigerator is too small for a crock pot so have never tried it. I do think if you assembled it all and refrigerated it, the timing possibly might work out better. Seven hours is a long time and a cook needs their beauty sleep, too, so maybe the chill factor would slow down the slow cooker. LOL! The texture of the potatoes is less than ideal but a crock pot is not the same as frying pan.
